3- Add the hot broth, and over medium heat let the rice cook until it dries. If you see necessary, add more water.

4- When the rice dries and you notice that it is already cooked, add the butter, the grated Parmesan cheese, the salt and the pepper (optional). Mix everything very well until a dough is formed and let it cool.

5- With previously greased hands, form the balls with the rice. Place a piece of mozzarella cheese in the center of each ball and close it well.

6- Pass the balls through the beaten eggs and then through the breadcrumbs.

7- When serving, fry the balls with plenty of hot oil until they get a golden color.
