Although the preparation of the meringue may seem simple, it is very important that the mixture ends with the necessary consistency. A very liquid meringue will prevent the filling and decoration of our children's cakes from not being good at all.

  • 90 grams in egg whites
  • 180 grams of sugar
  • Vanilla essence

Advice: When beating for the second time, we must avoid doing it manually since it is very difficult to do it quickly enough. It is highly recommended to have electric rods so that the mixture is just right.

1. In a large bowl, pour all the egg whites and all the sugar.

2. Time to use the manual rods. With the bowl in a bain-marie, beat very, very quickly until the sugar grains are completely dissolved.

3. Once there is no trace of the sugar, we have to use the electric rods. Add the vanilla essence to the mixture and beat at high speed for 6 minutes.
