Yemas de Santa Teresa are the most famous dessert in the city of Ávila, whose patron saint is precisely Saint Teresa of Jesus. To celebrate his feast, which is celebrated on October 15th, nothing better than cooking this dessert with your children.

It is a traditional recipe that has been passed down from father to son for generations in secret. Only suitable for those with a sweet tooth, this dessert is a perfect way to introduce your children to the kitchen and spend a fun afternoon with the family.

  • 12 egg yolks
  • 100 grams of icing sugar
  • 185 grams of sugar
  • 12 tablespoons of water
  • 1 lemon
  • 1 cinnamon stick

Tips: They come out about twice as many cakes as the number of yolks, so the proportions can be varied to taste.

1. In a saucepan, heat approximately twelve tablespoons of water. Add the lemon peel and cinnamon for flavor.

2. When it begins to heat up, add the sugar little by little, stirring slowly to mix. Let it boil, while stirring with the spoon, until it thickens and has the consistency of syrup, and remove from the heat.

3. Remove the lemon rind and the cinnamon stick. Strain the yolks and add the syrup slowly, mixing well until smooth.

4. Reheat the saucepan and pour the mixture into it. Keep over very low heat so that the yolks do not set, stirring with the spoon until a mass is formed that comes off the saucepan.

5. Let the dough cool on a plate. Form balls with your hands, sprinkle them with icing sugar and place in individual paper capsules.
