Panetone is a traditional Italian sweet, typical of the city of Milan. It is usually consumed during Christmas, and it is highly appreciated for its fluffy texture, which makes it the ideal accompaniment for breakfast or a snack.

You can fill the panettone with raisins and other fruits, in the traditional style, but at GuíaInfantil we propose a version more adapted to children. Surely you like this recipe for panettone, step by step and with chocolate, great!

  • 130 gr. of strength flour + 450 gr.
  • 70 gr. milk + 60 gr.
  • 25 gr. fresh yeast + 30 gr.
  • 1 teaspoon of sugar + 100 gr.
  • 1 orange or lemon and 3 eggs
  • 20 gr. of orange blossom water and 20 gr. vanilla essence
  • 100 gr. butter or margarine
  • 300 gr. chocolate chips
  • 25 gr. honey and a little salt

1. To make the panettone we will do two phases: sourdough and the main dough. To make the first one we will need 130 gr. of strength flour, 70 gr. of milk at room temperature, 25 gr. fresh baker's yeast and a teaspoon of sugar. The rest of the ingredients are reserved.

2. Mix the ingredients in a bowl, knead for 10 minutes so that it is homogeneous and elastic, make a ball with it and place it in a bowl with warm water until it doubles in volume (about ten minutes).

3. Meanwhile, mix the sugar with the zest of an orange or lemon, to obtain a flavored sugar that we will use later.

4. In a large bowl we will make the main dough. We start with 450 gr. of strength flour, then we add the flavored sugar, 30 gr. fresh yeast, a pinch of salt, eggs, 60 gr. of milk, 25 gr. of honey, 100 gr. butter, orange blossom water and vanilla essence. We mix well.

5. Incorporate the sourdough into the main dough, mix well so that they are integrated. Let it rest, until it doubles in volume (from 45 min to 1 hour.). When it has risen, we sprinkle flour on a surface. We pour the dough into it and then add the chocolate. We knead with our hands until we see the chocolate well distributed.

6. Preheat the oven to 180º. We cut the dough in two, because it makes two panettones. We introduce the dough into a mold and let it rise to double its volume. After the dough has doubled in volume again, we paint the panettones with beaten egg and make a cross on the surface, with a knife. Then we put them in the oven for approximately 45 minutes.
