The cuisine of Peru is one of the most famous in the world. Thus, offers us an easy and very exquisite recipe for the family's lunch or dinner: empanadas stuffed with veal, although we can also use minced chicken or pork. We can also use chili, which because of how spicy it is, is optional.

For the dough and filling

  • ½ Kg. Of strength flour
  • 5 eggs (4 cooked)
  • ¾ cup of milk
  • 250 gr. butter or margarine
  • ½ Kg. Of minced meat (beef or other)
  • 1 large onion / 2 hard tomatoes
  • Yellow pepper (julienned)
  • 2 cloves of garlic / Green or black olives
  • Parsley or coriander and salt / Oil

1- Mix the sifted flour with the salt on the table.

2- Add the butter or soft margarine to the flour and with the help of two forks mix everything until a paste texture is achieved.

3- Make a hole in the center of the dough and add the milk and the yolk.

4- Put everything together with your fingertips and give the dough a ball shape.

5- Wrap the dough in plastic wrap and put it in the fridge for about 2 or 3 hours.

6- While the dough is in the fridge, prepare the filling.

7- In a frying pan, heat the oil and then sauté the onion and minced garlic, then the tomatoes, salt, pepper and chili.

8- When everything is sautéed, add the meat with a little chopped parsley or coriander. Let cook for about 5 minutes.

9- When everything is cooked, remove from heat and let cool. Add the hard-boiled eggs and the chopped olives.

10- Take the dough out of the fridge and arrange it on the floured surface.

11- With the help of a rolling pin, open and stretch the dough, leaving it about 5 mm thick.

12- With the help of a pasta cutter or a large rimmed glass, cut circles about 8 cm in diameter.

13- Place the filling that should be cold in the center of each circle.

14- Close the dough forming a half moon and seal the edges with the help of a fork.

15- Brush the empanadas with the yolk of an egg.

16- Arrange the empanadas in a source and take them to the previously heated oven for about half an hour, or until golden brown.
